When it comes to healthy recipes we all want something that’s as flavoursome as it is tasty looking.
And that’s exactly what Fratelli in Belfast and Ballymena have created with their latest Shrink Menu.
The new menu allows diners to enjoy the great tasting rustic Italian food the restaurant is famous for, without worrying about the calories.
The Shrink menu healthy recipes, available in both restaurants, has been devised by well known fitness and nutrition expert Estelle Wallace.
RUMP STEAK RECIPE
1 rump steak per person (marinated in rosemary & black pepper 24hrs if possible)
1 vine ripe tomato per person (cut in half)
50-80 grms mixed leaves
5grms rosemary, taragon, chives, flat leaf parsley, basil – finely chopped
50 g pommace oil
add together & taste
chargrill tomato, and steak to preferred cooking temperature.
plate & serve
SHRINK SPAGHETTI WITH PRAWNS
1 carrot & courgette put through a spiralizer
6-10 pieces of sunkissed tomatoes
10-12 tiger prawns
2 tblsp tomato pesto
Sweat prawns off in a hot pan with access tomato oil. Blanch carrot & courgette in boiling water (1-2 minutes) add tomato pesto to pan with prawns. Add carrot & courgette. Mix together & plate, sprinkle with finely shaved herbs (taragon/parsley/chives)
