With the Easter holiday weekend just around the corner, there’s no time like the present to get prepared for family gatherings and an Easter Sunday feast to remember. To help you create a showstopping centrepiece for your dining table this year, the retailer is inviting shoppers to prepare a delicious Easter lamb using its easy-to-follow seasonal lamb recipe.
Slow roasted lamb with garlicky greens
Time: 4 hours
Serves: 6 people
Ingredients
For the lamb
- 1 Lidl boned and rolled lamb leg (£14.99)
- 2 large onions
- Handful of fresh thyme, leaves picked
- Handful of fresh rosemary stalks
- 4 cloves of garlic, cut in half lengthways
- Olive oil, for drizzling
- Sea salt and black pepper to taste
Method
- Preheat oven to 150C.
- To prepare the leg of lamb, stab 8 holes across the surface using a small knife, fill the holes with half a garlic clove and a sprig of rosemary, making sure to press the garlic clove right down into the flesh of the lamb.
- Season the meat with salt and pepper and drizzle with a little olive oil.
- Cover with tinfoil and roast in the oven for 3 and a half hours.
- After 3 and a half hours, remove the tinfoil and increase the heat to 230C for a further 20 – 30 minutes to caramelise the meat.
- To serve, carve the lamb and serve alongside potatoes and garlicky greens.
