Elton John’s Personal Chef To Head Up New Belfast Venue’s Food Offering

As Belfast’s newest luxury complex, Amelia Hall, nears completion, the city is set to welcome a taste of celebrity with its high-profile culinary recruit.

Tony Liddel, who for decades was a personal chef to stars like Elton John and the Rolling Stones, will be at the helm of the food offering at this new prestigious Howard Street venue.

Amelia Hall, located on the corner of Howard Street and Brunswick Street in the former Richard Owens building, is on its way to becoming a 112-room boutique hotel, promising to cater to both locals and tourists. The first phase, featuring a restaurant, café, beerhall and cocktail bar as well as a pizzeria and bakery, is slated to open on September 7.

The venue aims to blend Italian culinary essence with local produce to create a unique dining experience.

Tony, 58, who has spent decades on the road with top music acts, said the decision to join Amelia Hall was an easy one.

“I spent 24 years on the road in the music industry but it was time to settle down. My wife is from Portavogie and I was often here when I was working with Westlife.”

Tony’s career spanned working with top football teams in stadiums across the UK to stepping out on the road with some of the biggest acts in the business.

The Ringland Group’s executive chef explained: “My last contract was with Elton John on his farewell Yellow Brick Road tour. After 24 years in the music industry, I knew it was time to settle down. The constant travel becomes tiring, and I was ready for a new challenge.”

At Amelia Hall, Tony and his team will focus on traditional Italian fare, featuring fresh pasta, pizza, and small plates. He emphasised the importance of using local produce to create authentic flavours while supporting the community: “We’re bringing in local artisan producers for everything from fresh bread to charcuterie. Keeping it local ensures quality and supports the community,” he said.

Discussing his time with Elton John, Tony revealed the music legend’s simple but health-conscious tastes.

“Elton preferred fish and lamb, with his lamb chops done very well on the outside and pink in the middle. He was very health-conscious, avoiding carbs and sticking mainly to proteins and fish. He was easy to work with, if we were out on the road and he wanted something in particular that I couldn’t get he didn’t mind, no hassle” he said.

Tony’s experience spans a wide range of high-profile clients, including Ed Sheeran, Depeche Mode, and 90s pop acts like Steps and Blue. His extensive background will undoubtedly bring a touch of celebrity culture to Amelia Hall, but the chef to the stars said he’s focused on providing a top-notch dining experience for Belfast’s residents and visitors.

The £11.5 million Amelia Hall project is transforming two ground-level units adjacent to The Flint Hotel into an Italian-themed complex, the development is part of the Ringland Group’s commitment to revitalising Belfast’s Linen Quarter. And they’re planning on expanding to the Cathedral Quarter too.
